Easy Lemon Garlic Chicken & Rice

A one-pan dinner with very little cleanup and no mammal meat. Use dairy-free ingredients and check packaged broth labels if you’re especially sensitive to mammal-derived additives.

Ingredients

  • 4 boneless, skinless chicken thighs or chicken breasts
  • 1 cup long-grain white rice
  • 2 cups chicken broth, checked for Alpha-Gal-friendly ingredients
  • 1 lemon
  • 3 cloves garlic, minced
  • 1 tablespoon olive oil
  • 1 teaspoon dried oregano
  • 1 teaspoon paprika
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 2 cups broccoli florets
  • Fresh parsley, optional

Instructions

  1. Heat the oven to 400°F.
  2. In a large oven-safe skillet, heat the olive oil over medium-high heat.
  3. Season the chicken with oregano, paprika, salt and pepper. Brown it for about 2–3 minutes per side. It doesn’t need to cook through yet. Remove it to a plate.
  4. Add the garlic to the skillet and cook for about 30 seconds.
  5. Stir in the rice, chicken broth, juice of half the lemon and a little lemon zest.
  6. Place the chicken back on top of the rice.
  7. Cover and bake for 20 minutes.
  8. Add the broccoli around the chicken, cover again and bake another 8–10 minutes, until the rice is tender and the chicken reaches 165°F.
  9. Finish with more lemon juice and parsley.

Alpha Gal Note

The basic ingredients are naturally mammal-free, but packaged chicken broth is the ingredient I’d double-check. Some prepared foods can contain mammal-derived flavorings or additives. If dairy is an issue for you, this recipe already skips butter and cheese entirely.
