A one-pan dinner with very little cleanup and no mammal meat. Use dairy-free ingredients and check packaged broth labels if you’re especially sensitive to mammal-derived additives.

Ingredients
- 4 boneless, skinless chicken thighs or chicken breasts
- 1 cup long-grain white rice
- 2 cups chicken broth, checked for Alpha-Gal-friendly ingredients
- 1 lemon
- 3 cloves garlic, minced
- 1 tablespoon olive oil
- 1 teaspoon dried oregano
- 1 teaspoon paprika
- ½ teaspoon salt
- ¼ teaspoon black pepper
- 2 cups broccoli florets
- Fresh parsley, optional
Instructions
- Heat the oven to 400°F.
- In a large oven-safe skillet, heat the olive oil over medium-high heat.
- Season the chicken with oregano, paprika, salt and pepper. Brown it for about 2–3 minutes per side. It doesn’t need to cook through yet. Remove it to a plate.
- Add the garlic to the skillet and cook for about 30 seconds.
- Stir in the rice, chicken broth, juice of half the lemon and a little lemon zest.
- Place the chicken back on top of the rice.
- Cover and bake for 20 minutes.
- Add the broccoli around the chicken, cover again and bake another 8–10 minutes, until the rice is tender and the chicken reaches 165°F.
- Finish with more lemon juice and parsley.

The basic ingredients are naturally mammal-free, but packaged chicken broth is the ingredient I’d double-check. Some prepared foods can contain mammal-derived flavorings or additives. If dairy is an issue for you, this recipe already skips butter and cheese entirely.
